Make your own Pot De Crème

|300 g whole milk 3.5%
700 g heavy cream 35%
|In a saucepan, heat up the milk and cream to a simmer.|
|12 large egg yolks
110 g granulated sugar
|Mix together the egg yolks and sugar.|
Add the yolks mixture to the warm milk and cream and mix well.
|140 g dark Belgian chocolate||Add the chocolate and mix with a whisk until thoroughly blended. Finally emulsify with an immersion blender for 30 seconds.|
Using a sauce gun, dispatch into small ramekins. Bake at 90°C for approximately 40 minutes or until just before the centre is set. Keep refrigerated until served.
